Grandma’s Butter Tarts

Christmas baking in November reminds me of my mother-in-law. When our kids were small, she would always ship a small box of Christmas baking to us with an impressive variety of sweets, since she lives on the other side of the country.

These tarts were always in the box. They are so easy to make it would be a shame not to bake them. I did use store-bought pastry shells but you can make your own pastry, if you are that way inclined. I’d also recommend using the medium-sized tarts because it makes more.

Easy Butter Tarts

Makes 18 to 24 tarts

Pastry or store-bought shells for 18 large or 24 medium tarts

Butter tart filling:

1 cup brown sugar

3/4 cup corn syrup

1/2 teaspoon salt

1 teaspoon vanilla

2 eggs, slightly beaten

1/2 cup chopped walnuts

1 cup dark raisins

1/2 cup butter, melted

Preheat oven to 400° F. 

Mix together in a medium bowl the sugar, corn syrup, salt, vanilla, and eggs. Add the nuts, raisins, and melted butter. Stir to combine. Spoon the filling into the pastry lined tart tins. Fill to 2/3 full and bake at 400° F for 15 minutes.
