Halibut with Tropical Fruit Salsa

This is a vibrant dish to serve for dinner. Any fish can be used if you can’t find halibut, just adjust the cooking time according to its thickness. I recommend cooking 10 minutes for each inch. 
Serves 6

1 1/2 pounds of halibut (fresh or thawed, if frozen)
Olive oil, for brushing
Salt and pepper, to taste

For the salsa:

1 red bell pepper, seeded and diced
3/4 cup papaya, cut into 1/2″ pieces
3/4 cup pineapple, peeled and cut into 1/2″ pieces
1/2 medium red onion, diced
2 1/2 tablespoons fresh lime juice
1 tablespoon honey
2 tablespoons olive oil
1 jalapeno pepper, seeded and diced (optional)
1 tablespoon fresh cilantro, minced


Preheat oven to 425° F. 

Combine all the fruit salsa ingredients in a bowl and set aside.

Brush the halibut with olive oil and sprinkle with salt and pepper. Place in a baking pan and bake for 10 to15 minutes, or until the fish flakes easily with a fork. 

Serve fish topped with fruit salsa or on the side.
